Flatbread Pizza Quick and Simple

Since the 1940s, The Lighthouse Cafe on Pier Avenue has hosted myriad jazz bands, and now everything from rock to reggae puts patrons on the dance floor.
Along with tunes, the restaurant features classic American grub such as chicken wings, sandwiches and hamburgers. But Pablo Hernandez, a cook at the cafe, said that the flatbread pizza remains the most satisfying.

Flatbread Margherita Pizza
1 flatbread pizza crust

1 ounce olive oil
5 ounces fresh mozzarella (cut into five 1-ounce slices)
5 ounces yellow and red tomato (five 1-ounce slices)
1/4 ounce basil chiffonade
1 pinch of salt
1 pinch of black pepper
Brush pizza crust with olive oil. Layer tomato and mozzarella slices alternately and evenly on top of flat bread crust.
Sprinkle salt and pepper and bake at 500 degrees for about five to seven minutes, or until crust is golden brown and mozzarella is melted.
Slice into six equal pieces and garnish with basil.
